Roasted Rosemary Potato Recipe

Potatoes (yellow or red fingerling or small potatoes)
Olive Oil
Kosher Salt

Tools Needed

Cast Iron or other oven proof skillet
Cutting board
Mixing Bowl


Roasted Rosemary Potato Recipe

Preheat oven to 400 degrees. Wash potatoes and slice in half, Mince garlic and rosemary. Toss garlic, rosemary, potatoes and olive oil in a bowl and place potatoes cut side down in a cast iron skillet. Pour any remaining olive oil mixture over potatoes. Roast in oven for 30-40 minutes until potatoes are soft when pierced with a fork.

  • 1lb red or gold small potatoes
  • 2 cloves garlic minced
  • 1 Tablespoon Fresh Rosemary minced
  • 3 Tablespoons olive oil
  • Salt and Pepper to taste


  1. Preheat oven to 400 degrees. Wash and slice potatoes in half. Mince garlic and rosemary. Toss garlic, rosemary, potatoes and olive oil in a bowl until coated. Season with salt and pepper to taste. Place potatoes cut side down into a cast iron skillet or oven proof dish. Roast in oven for 30-40 minutes or until potatoes can be pierced with a fork.
