Roasted Rosemary Potato Recipe
A simple combination of fresh whole food ingredients. Crispy potatoes combined with the savory flavors of garlic and rosemary seasoned with a hint of salt and pepper. What’s not to love? The ingredients and tools needed for this recipe are listed below for your convenience.
Potatoes (yellow or red fingerling or small potatoes)
Cast Iron or other oven proof skillet
Preheat oven to 400 degrees. Wash potatoes and slice in half, Mince garlic and rosemary. Toss garlic, rosemary, potatoes and olive oil in a bowl and place potatoes cut side down in a cast iron skillet. Pour any remaining olive oil mixture over potatoes. Roast in oven for 30-40 minutes until potatoes are soft when pierced with a fork.
- 1lb red or gold small potatoes
- 2 cloves garlic minced
- 1 Tablespoon Fresh Rosemary minced
- 3 Tablespoons olive oil
- Salt and Pepper to taste

Place potatoes cut side down into a cast iron skillet or oven proof dish. Roast in oven for 30-40 minutes or until potatoes can be pierced with a fork.
