Simple Caesar Salad Recipe

This is one of my go to recipes a simple Caesar salad recipe. The dressing does not use eggs so it’s a safer alternative than your traditional Caesar Salad. I also use homemade croutons but you can use store bought if you like.

I learned how to make the croutons in a cooking class in high school and I’ve worked on perfecting the recipe ever since. You can access my homemade crouton recipe here. The original dressing recipe came from a dear friend. I’ve modified that and made it my own over time. This Caesar Salad Recipe is fantastic on its own or can be made into a full meal by adding blackened chicken, shrimp or fish. Check out our favorite Blackened Chicken Recipe here.

If you are making my crouton recipe start with preparing the croutons.

Prepare the lettuce by washing and spinning or patting dry. Cut the lettuce. Shave the parmesan cheese using a vegetable peeler. This step of shaving really makes a difference in the taste. There is a huge difference in the flavor of shaved parmesan versus shredded our grated parmesan.

I like to put salad plates in the freezer at this point so they will be cold when the salad is ready to be served.

Prepare the dressing. Place lettuce and parmesan in a salad bowl, add croutons and dressing and toss. Serve on chilled salad plates. Optional: Top with Blackened Chicken.

No Egg Ceasar Salad with Homemade Croutons


  • For the dressing
  • 1/2 a tube of anchovy paste
  • 1/2 cup olive oil
  • 4 Tablespoons Dijon Mustard
  • 4 teaspoons Beaver Hot Horseradish
  • 4 dashes Worcestershire Sauce
  • 4 dashes tabasco sauce
  • juice of one lemon
  • 3 garlic cloves crushed
  • Cracked black pepper to taste
  • For the salad:
  • Two Artisian Heads of Romaine Lettuce or one large head of romaine
  • 1/4 parmesan cheese shaved
  • Cracked black pepper to taste

  1. For Salad:
  2. Clean and cut lettuce into bite sized pieces. Shave parmesan using a potato peeler or grater. Add parmesan to salad bowl, cover and refrigerate.
  3. For Salad Dressing:
  4. Squeeze half a tube of anchovy paste into a glass bowl. Add 1/2 cup olive oil, juice of one lemon, horseradish, garlic, Worcestershire, tabasco and garlic and whisk to combine. Add cracked black pepper to taste. The dressing will be thick but will thin out when combined with hot croutons in the salad.
  5. Assemble the salad:
  6. Remove salad bowl from the fridge, add desired amount of croutons to salad. Warming the croutons in the oven makes a big difference) Toss half the dressing with the salad and croutons, add more dressing if desired. Season with cracked black pepper and serve. Add grilled or blackened shrimp or chicken for a meal.
