Spicy Asparagus Recipe
One of my favorite things about this time of year is the tender asparagus. I’m always looking for ways to add more vegetables to our meals. My favorite recipes are those that are fresh, quick and uncomplicated. This spicy asparagus recipe is a quick, tasty dish that combines just four ingredients and is ready in under 10 minutes. What’s not to love?
red pepper flakes
Cast Iron Skillet
Heat olive oil over medium high heat. Add red pepper flakes and toast them for one minute. Be careful not to breathe in the fumes, it will make your eyes water and can produce a coughing fit! (this has happened to me more times than I can count!)
Break asparagus to remove the woody stems. Did you know that asparagus breaks exactly where it should? Just by holding the bunch in your hand and breaking? Add asparagus to the pan and saute 1-2 minutes. Add garlic and continue to move asparagus around in the pan so the garlic coats but doesn’t burn. Remove from heat when asparagus is bright green another 2-3 minutes. That’s it! Serve!
- 3 cloves garlic
- 2 teaspoons olive oil
- 1 teaspoon crushed red pepper flakes
- Salt and Pepper to Taste
- Clean and break asparagus to remove the woody stems. Mince garlic. Heat a cast iron skillet over medium high heat and toast red pepper flakes. Add asparagus tossing to coat with oil and red pepper. Sauté 2-3 minutes. Add garlic sauté an additional 1-2 minutes. Keep asparagus moving in the pan to prevent garlic from burning. Remove from heat when bright green and still slightly crisp.
